Mums Peanut Brownies

Mums Peanut Brownies.

Unlike the American Brownie, these are actually biscuits. Very dense and packed full of peanut, coconut and chocolate tastiness…perfect with a fresh cup of coffee in the spring sun.



The recipe:

1 cup flour

1 cup coconut

1 cup peanuts

1 cup brown sugar

1 tsp baking powder

1 tbsp cocoa

115 grams butter (room temp)

1 egg.

Pre heat oven to 180C.

Best to use peanuts in their brown shells, unsalted. Roast them in the oven until the skins start to come off and the peanuts are fragrant and lightly browned. When cool, brush away most of the skins. Chop by hand or in a mixer. to smallish pieces. Leave to one side. Sift flour, baking powder and cocoa into bowl. Add coconut and mix well. (Handy tip – the peanut skins can go into the garden)

In a mixer beat together butter and brown sugar until light and fluffy. Add egg and beat again till well combined. Mix together with dry ingredients and add peanuts. This will look like a very dense doughRoll a heaped teaspoon amount together and put on baking tray. Bake for 15-20 mins near top of oven. After approx ten mins move to lower oven level. Cool and enjoy.
